6 large Mc intosh apples
2 tablespoons water 2 cups diced, peeled and cored apples 2
tablespoons sugar 1/2 teaspoons vanilla 3 tablespoons strained apricot
preserves whipped cream
Choose large
baking apples. Wash, do not peel. Slice off crosswise the top 1/3 of
apples. Save tops. Core apples. Arrange in baking pan with water. Bake
until center of apples is tender. Arrange on serving dish. In a medium
saucepan, stew diced apples with sugar, until thick. Add vanilla. Cool, and
add strained apricot preserves. Chill. Fill apples with puree. Top
with whipped cream. Serve.
