BLUEBERRY-BANANA PANCAKES
Serves 6 to
8
1 1/2 cups sifted all
purpose flour 1/4 cup sugar 4 teaspoons baking powder 1 teaspoon
salt 2 eggs, well beaten 1-1/2 cups milk 1/4 cup butter, melted
2/3 cup mashed banana 1 teaspoon vanilla extract 2 cups fresh
blueberries
Mix flour,
sugar, baking powder and salt. Add eggs, milk, butter, bananas and vanilla.
Stir until well blended and smooth. Fold in blueberries. Spoon about 1/4
cup of batter for each pancake on preheated, greased griddle. Turn only once.
