PEACH COBBLER

Serves 6
2 cups
cooked peach halves 1 cup peach juice 1/2 cup brown sugar 1 pinch
salt 1 tablespoon cornstarch 1/4 teaspoon mace 1/4 teaspoon nutmeg
1 1/2 teaspoon butter 1 tablespoon lemon juice
topping: 1
1/4 cups flour 3 tablespoon sugar 1 tablespoon baking powder 1/4
teaspoon salt 1/3 cup shortening 1 egg 1/2 cup milk
Preheat
oven at 375 degrees. Drain cooked peach halves, fresh, frozen, or canned.
Save 1 cup of juice. In a saucepan, mix brown sugar, salt, cornstarch, mace,
and nutmeg. Add peach juice. Cook till thick. Add butter, and lemon juice.
Arrange peaches in buttered casserole dish. Pour hot sauce over
peaches. Topping: Mix together flour, sugar, baking powder, and salt.
Cut in shortening. Mix together, and add egg, and milk. Stir with fork,
and drop by spoonfuls onto peaches. Bake at 375 degrees 25 to 30 minutes.
