REISLING SUMMER
BERRY COMPOTE

cups raspberries 3/4 cup Reisling wine 1/4 cup honey 1 cup
blueberries or blackberries
In food processor, purée 1/2 cup of
the raspberries with the wine. Transfer to small pan; add honey. Place over
medium-high heat and bring to boil; reduce heat and simmer for 2 minutes.
Strain mixture through fine sieve into bowl. Let cool slightly; refrigerate
until cold. Add remaining fruit. Toss gently and let stand for up to 20
minutes to macerate.
