CLOUD BISCUITS

Makes 16 2-inch round biscuits

4 cups flour
2 teaspoons white sugar
8 teaspoons baking powder
1 teaspoonsp salt
1 cup shortening
2 beaten eggs
1 1/3 cups milk (Evaporated milk is the best)


Sift dry ingredients. Cut in shortening until coarse.
Combine eggs and milk. Add to flour; mix all at once.
On floured surface, toss dough lightly until no longer sticky.
Roll out to 2-inch thick; cut with 2-inch floured cutter.
Place on ungreased cookie sheet.
Bake in 450 degree F. oven until lightly browned on top, about 18 minutes.
