HOT BISCUITS

Makes 16 2-inch round biscuits

3 cups flour
4 1/2 teaspoons baking powder
2 tablespoons white sugar
3/4 teaspoon salt
3/4 teaspoon cream of tartar
3/4 cup shortening
1 cup milk
1 egg

Combine the flour, baking powder, sugar, salt, and cream of tartar in a large mixing bowl.
Cut in the shortening. Add one half of the milk.
Add egg to remaining milk, and mix all together. Turn dough out onto floured surface.
With floured hands, gather dough into ball; knead gently 10 times or until smooth.
Pat out dough into 1/2-inch to 3/4-inch thickness. cut with 2-inch floured cutter.
Place 2-inches apart on ungreased baking sheet. Bake for 12 to 15 minutes or until biscuits have risen and are lightly brown. Serve warm.
