OLD FASHIONED SCOTCH SCONES

makes: 18

1 3/4 cups quick rolled oats
1 1/2 cup flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup currants
1/2 cup melted butter
1/3 cup milk
1 egg

Preheat oven to 425 degrees.
Combine rolled oats, flour, sugar, baking powder, salt, and currants in a large mixing bowl.
Beat together butter, milk and egg. stir liquid ingredients into flour with fork until mixture leaves sides of bowl and forms a soft, moist dough.
On floured surface, toss lightly until no longer sticky. Do not overmix. Pat or roll into a rectangle 9 by 12-inches.
Cut into 9 rectangles of equal sizes. Then cut each rectangle diagonally to form 18 rectangles.
Place on lightly greased cookie sheet. Bake for 12 to 14 minutes or until light golden brown.
Serve warm.
