COUNTRY BREAD
1 tablespoon dry yeast
1 1/2 cups warm water 2 cups bread flour 3/4 cup coarse wheat flour
1 cup warm water 1 tablespoon salt 5 cups bread flour 1 egg
white 2 teaspoons sesame seeds
Dissolve yeast in 1/4 cup warm
water and let stand for 5 minutes. Stir in the remaining 1 1/4 cups water and 2
cups bread flour beating for a minute. Cover bowl and let stand for 12
hours. To make dough, combine wheat flour, water, salt and 4 cups bread flour
in the sponge. Mix well. Knead remaining flour into dough. Cover dough in
bowl. Let rise until tripled in volume, then punch dough on floured surface.
Divide dough in half and shape into round disks. Place on two baking
sheets. Cover with a towel. Let rise until doubled. Preheat oven to 400
degrees. Brush dough with egg white and water. Boil 2 cups of water and put in
a bake dish in the oven to steam for 2 minutes. Bake bread at for about 40
minutes.
