CRANBERRY-ORANGE BREAD

cups chopped cranberries 3 1/2 cups flour 2 cups sugar 3 teaspoons
baking powder 1 teaspoon baking soda 1 teaspoon salt 2 eggs 2
tablespoons orange rind 1 1/2 cups orange juice 1 cup chopped walnuts
1/2 cup canola oil
Preheat oven to 350 degrees. Sift together
flour, sugar, baking powder, baking soda, and salt. Stir in coarsely chopped
cranberries. Beat together, eggs, orange juice and rind, walnuts, and oil.
Add liquid to dry ingredients. Beat for a while. Grease 5 mini loaf pans or
one 81/2- by 41/2-inch loaf pan. Turn batter into prepared pan(s). Bake
about 40 minutes for small pans, and about 1hour for large pan. Cool for 5
minutes, and unmold on rack.
