DATE AND NUT BREAD

Makes: 1 large loaf

3/4 cup boiling water
1 1/2 cups chopped dates
2 cups flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped nuts
1 egg
1 cup milk
1/4 cup vegetable oil

Preheat oven to 350 degrees. Combine water and dates, and cook and stir over medium heat until thickened. Cool.
Combine flour, sugar, baking powder, baking soda and salt. Stir in the chopped nuts.
Beat together egg, milk and oil. Add date mixture and liquid to dry ingredients and beat for about half a minute.
Turn into a 9-inch by 5-inch by 3 inch greased loaf pan, or 3 mini loaf pans, greased.
Bake for 65 to 70 minutes for loaf pan 40 to 45 minutes for mini pans.
