KHACHAPURI

1 package yeast
1/4 cup warm water
1 teaspoon sugar
3/4 cup warm milk
4 ounces melted butter
2 teaspoons sugar
1 1/2 teaspoons salt
2 eggs
1 egg yolk
4 cups flour
1 tablespoon corn meal
1 egg
1 tablespoon cream

For the filling:
2 pounds Tilsiter cheese, grated
3 teaspoons melted butter
2 teaspoons blue cheese
2 eggs
1/4 teaspoon coriander
1/4 teaspoon white pepper

In a mixing bowl, combine the yeast, warm water, sugar, and warm milk. Let stand 10 minutes. Beat in the melted butter, sugar, salt, eggs, and flour.
Knead 10 minutes and cover. Cover with a towel, and let rise 45 minutes. Refrigerate 4 hours.
For the cheese filling, make a paste with the six ingredients. Preheat oven to 350 degrees.
Divide dough into two equal parts. Butter a 9-inch pie plate and sprinkle with cornmeal. Roll out the dough and line pie plate with half of the dough.
Fill with cheese mix and cover with the other half of dough to seal. Let rise 20 minutes.
Brush with egg and cream. Bake for 45 to 50 minutes. Serve hot.
