PHYLLO DOUGH

Although phyllo dough is available in most supermarkets, here is the homemade version.

2 1/2 cups bread flour
3/4 teaspoon salt
3/4 cup warm water
1 egg, beaten
1/4 teaspoon white vinegar
2 teaspoons melted butter

Sift flour and salt and make a well.
Mix remaining ingredients and pour in well. Work into dough. Knead 10 minutes. Cover. Set aside 20 minutes.
Divide dough in half. Roll dough as thin as possible. Stretch by hand on a large working surface.
Cut into 20 by 15-inch rectangles. Wrap and seal in plastic wrap. Refrigerate or freeze.
