SUE'S AWESOME POPOVERS

makes: 12

6 eggs
3 cups milk
1 teaspoon salt
3 cups all purpose flour
oil

In a mixing bowl, whisk together the eggs, milk, salt and flour. Strain the mixture and let rest 1 hour.
Pour 1/4 inch of oil for each popover in large muffin pans.
Heat the oil in the oven at 450 F. until it smokes, about 15 minutes. Fill the cups with mix and bake at 350 F for 45 to 50 minutes.
The popovers will be brown and crisp. Serve with roastbeef.
