THREE CHEESE BREAD

Makes 12 slices

2 cups flour
3/4 cup grated swiss cheese
3/4 cup grated cheddar cheese
1 tablespoon grated parmesan
1 teaspoon baking powder
1 teaspoon dry thyme
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk
1/2 cup plain yogurt
1/4 cup vegetable oil
1 egg, beaten

Preheat oven to 350 degrees. Line a 9 by 5 inch loaf pan with parchment paper, leaving 1 inch overhang of paper; set aside. In large bowl, combine flour, Swiss and cheddar cheese, and Parmesan, baking powder, thyme, baking soda and salt. With fork, stir in milk, yogurt, oil and egg just until dry ingredients are moistened.
Spoon batter into prepared pan; Sprinkle remaining Parmesan evenly over top.
Bake 40 to 50 minutes and test center with toothpick that should come out clean. Let stand in pan for 15 minutes. Use parchment paper overhang to remove loaf from pan; remove wax paper from loaf. Serve warm.
