CHOCOLATE BANANA CAKE

serves 12 TO 14

2 cups sugar
1 cup shortening
2 eggs, beaten
3 bananas, mashed
1/2 cup cocoa
2 1/2 cups flour
2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1 cup boiling water

Preheat oven at 300 degrees.
Cream sugar and shortening. Add eggs and bananas. Mix well. Sift cocoa, flour, soda and salt.
Add alternately with buttermilk.
Mix well. Lastly, mix in boiling water. Bake in a 13-inch by 9-inch ungreased pan 50 to 60 minutes. Cool and frost with fudge frosting.
FROSTING
1 cup sugar
1/2 cup cocoa
1/2 cup margarine
1/4 cup milk
1/4 teaspoon salt
1 teaspoon vanilla

Combine all ingredients in a saucepan.
Cook over low heat, stirring constantly until sauce comes to a boil for 2 minutes. Remove from heat.
Add vanilla, and frost cake while icing is hot.
