GINGER BREAD, GINGER CAKE or MOLASSES CAKE

serves 12

1/2 cup shortening
1/2 cup sugar
1 egg
1 cup molasses
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon cloves
1 teaspoon ground ginger
1/2 teaspoon salt
1 cup boiling water

Preheat oven to 350 degrees.
Grease a 9 by 9-inch square pan.
Cream shortening and sugar. Add egg and molasses. Sift dry ingredients and add to creamed mixture.
Mix in boiling water last. Pour mixture into pan.
Bake 50 minutes.
NOTE: makes 3 mini loaves or 14 muffins
