GINGER CAKE
Serves 12 to
14
1/2 cup shortening 1/2 cup brown sugar 1
egg 1 cup molasses 2 1/4 cups flour 1 teaspoon baking soda 1
teaspoon cinnamon 1/4 teaspoon cloves 1/2 teaspoon ginger 1 teaspoon
salt 1 cup boiling water
Preheat oven
to 350 degrees. Grease a 9-inch by 9-inch square pan. Cream shortening and
brown sugar. Add egg and molasses. Sift dry ingredients and add to creamed
mixture. Mix in boiling water last. Pour mixture into pan. Bake 50 minutes
or until tester comes out clean. Unmold on rack to cool. NOTE: makes 3 mini
loaves or 14 muffins
