LIME FROMAGE

Serves 4

3 egg yolks
1/2 cup sugar
3 tablespoons lime juice
Grated lime peel
2 teaspoons gelatin
3 egg whites
1/4 teaspoon cream of tartar

Beat egg yolks and sugar till fluffy and white.
Combine lime juice and gratings with gelatin to dissolve. Heat to melt.
Beat egg whites with cream of tartar till firm. Fold in chilled egg mixture. Put in individual bowls or large bowl. chill.
