PRINCESS ELIZABETH CAKE
1 cup dates, chopped
1 teaspoon baking soda 1 cup water, boiling 1/2 cup shortening
1 cup sugar 2 eggs 1 teaspoon vanilla 1 teaspoon baking powder
1 teaspoon salt 2 cups flour
topping: 3/4 cup brown sugar
1/2 cup butter 4 tablespoons Carnation milk 1 cup coconut
Preheat oven to 350 degrees. Combine dates, baking soda and water.
Cool. Cream shortening and sugar. Beat in eggs, vanilla, baking powder,
salt, and flour. Mix in the dates. Bake 40 minutes.
Make topping: In
a medium saucepan, combine brown sugar, butter, and Carnation milk. Boil for 3
minutes, and mix in the coconut. While cake is still warm, spread over cake.
