RAISIN SPICE CAKE

2 3/4 cups water
2 cups light brown sugar
2 cups raisins
1 cup butter, softened
1/4 cup lemon juice
2 1/2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/4 teaspoon salt
4 cups flour, all purpose
1 1/2 teaspoons baking soda
1 1/2 cups pecans, chopped (or walnuts)


Preheat oven at 300 degrees.
Grease and flour a 13" by 9" metal pan In a large saucepan, bring water to boil.
Stir in sugar, raisins, butter, lemon juice, spices, and salt. Cook over medium heat while stirring until sugar is dissolved.
Simmer on low heat for 10 minutes. Let cool.
Combine flour and baking soda.
Gradually stir into cooled liquid mixture. Mix in nuts.
Bake for about 1 hour, or until cake tester inserted in center comes out clean.
Unmold and let cool on cake rack.
