RUM-GLAZED FRUIT LOAF
A medley of fruits plus
ginger and rum gives great flavor and moisture to this easy, low fat quick
bread.
1/2 cup crushed pineapple, well drained 1/2 cup mashed
bananas 1/2 cup golden raisins 1/2 cup chopped dried apricots 1/2
cup frozen orange juice 1/4 cup chopped candied ginger 2 eggs 2/3
cup sugar 1/3 cup vegetable oil 2 cups flour 1 teaspoon baking soda
1/2 teaspoon salt glaze: 1/4 cup sugar 2 tablespoons rum
Preheat oven to 350 degrees. Grease and flour a 9 x 5 inch metal
loaf pan. In a bowl mix together the first six ingredients; set aside. In a
large bowl, beat eggs with sugar and oil. Stir in fruit mixture. Mix
together flour, soda, and salt; stir in, mixing just until blended. Pour into
pan. Bake for 55 to 60 minutes or until tester comes out clean. Let cool
for about 5 minutes; leave in pan to glaze. GLAZE: Combine sugar and
rum. Pour over top of warm loaf. Let cool in pan. about 15 minutes, then turn
out and let cool thoroughly. (may be wrapped airtight and stored up to 3 days
or frozen.) Cut into slices; serve lightly buttered if desired.
