TIGER CAKE
4 ounces butter,
softened 1 cup sugar 2 egg yolks 2 egg whites 1 teaspoon
vanilla extract 1 1/2 cups flour 1 1/2 teaspoons baking powder 1/3
cup milk 1 1/2 tablespoons cocoa powder
Preheat oven at 350
degrees. In an electric mixer, beat butter and sugar till light. Mix in egg
yolks and vanilla. Combine flour and baking powder. Add to the egg yolk
mixture, alternately with the milk. Beat egg whites till firm. Fold in the egg
yolk mixture. Mix 1/3 of the mixture with cocoa powder. Stir into
remaining mixture. Butter and flour a 9-inch cake pan. Bake 45 minutes or
until tester comes out clean. Unmold on rack to cool.
