ZUCCHINI CAKE

3
cups grated zucchini 3 cups sugar 1 cup oil 4 eggs 1 1/2 cups
flour 1 1/2 cups whole wheat flour 1 cup chopped nuts 1 1/2
teaspoons cinnamon 2 teaspoons baking powder 1 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350 degrees. Grease a 10 inch
tube pan. Peel and remove seeds from zucchini; grate. Beat eggs well; add sugar
and oil. Fold in dry ingredients followed by zucchini and nuts. Pour
into prepared pan and bake for 1 hour. Unmold on rack to cool.
