CHOCOLATE MARBLE CHEESECAKE
Serves 8 to 10
Crust: 1 1/2 cups Graham cracker crumb 1/4 cup sugar 6
tablespoons melted butter 1 tablespoon cocoa
Filling: 3 8-ounce
cream cheese, softened 2 teaspoons vanilla 1 cup sugar 5 eggs
1/2 cup sour cream 3 ounces semi sweet chocolate
Preheat oven
to 350 degrees. Crust: Combine first 4 ingredients. Place in a food processor
until fine. Press on bottom and sides of a greased 9 inch spring form pan.
Set aside.
Filling: Beat cream cheese, vanilla and sugar until
smooth. Add eggs, one at the time. Blend until smooth. Stir in sour cream. Melt
chocolate. Combine about 3 cups of batter with cooled chocolate. Pour plain
cheese mixture into crust and gradually add chocolate mixture, using a zigzag
motion to blend. Bake 40 minutes or until firm around edges but still soft
in the center. Remove from oven. Run knife over side of pan. Cool cake.
Remove sides of pan. Chill.
