CITRUS KISS CHEESECAKE
serves: 8 to 10
Crust: 1 cup graham crumbs 3 tablespoons sugar 4
tablespoons butter, melted
Filling: 3-8 ounce packages Philadelphia
cream cheese, softened 1 cup sugar 3 eggs 1 tablespoon grated lemon
rind 2 tablespoons lemon juice 1 tablespoon limes juice 1
tablespoon lime juice Garnish with mint leaves
Crust: Heat
oven to 350 F. Combine the crust ingredients and press onto bottom of 9"
spring-form pan. Bake 10 minutes.
Filling: Using an electric mixer
on low speed, beat cream cheese and sugar together until smooth. add eggs one
at a time, just until blended. Add remaining ingredients, pour over crust.
Bake at 350 F for 50 minutes or until center is almost set. Remove from
oven and run knife around rim of pan. Cool thoroughly at room temperature.
Refrigerate until cold. Garnish with mint leaves.
