COCONUT CRISPIES
Makes 24
1 cup
shortening 1/2 cup brown sugar 1 cup white sugar 1 egg 1 cup
oatmeal 1 cup flakes coconut 1 1/2 cups flour 1 teaspoon baking
soda 1 teaspoon baking powder 1/2 teaspoon salt
Preheat oven to
350 degrees. Cream shortening with brown and white sugars. Add egg and
mix well. Combine all dry ingredients and add to the shortening mixture.
Spoon the equivalent of 1 teaspoon on greased cookie sheet. Bake for 12-15
minutes. Transfer cookies on a rack and cool.
