MAPLE WAFERS
1/4 cup shortening
1/2 cup melted butter, cooled 3/4 cup light brown sugar 1 egg 1
teaspoon maple extract 1/2 cup all purpose flour 1/2 teaspoon cream of
tartar 1/2 teaspoon baking soda
Preheat oven to 350 degrees. In
the bowl of an electric mixer, combine shortening, butter, sugar, egg and maple
extract. Beat until thick and creamy. Combine the flour, cream of tartar
and baking soda, and beat into the creamy mixture until smooth. Using a
teaspoon, spoon a teaspoonful onto a buttered baking sheet. Press with a wet
glass bottom. Bake for 8 to 10 minutes. Cool and transfer to a rack.
