1 cup all-purpose flour 2 tablespoons cornstarch 1/2 cup
confectioners' sugar 1 cup butter, softened 1 1/2 cups flaked coconut
Preheat oven to 300 degrees. Mix flour, cornstarch, and sugar in a
bowl. Blend in butter to form a soft dough. If dough is too soft to handle,
cover and chill. Shape into 3/4-inch balls. Roll in coconut. Place
1 1/2 inches apart on ungreased baking sheets. Bake for 20-25 minutes, or until
lightly browned.
