OATMEAL RAISIN COOKIES
Makes 30 4-inch cookies
1 cup soft butter 1 cup white sugar 1/2 cup light brown sugar
1 egg, beaten 1 1/2 cups flour 1 baking soda 1 teaspoon
cinnamon 1 1/2 cups quick rolled oats 3/4 cup chopped walnuts or pecans
3/4 cup raisins 1 teaspoon vanilla extract
Preheat oven to
350 degrees. In an electric mixer, cream butter, white sugar and brown
sugar. Add egg and mix well. Combine flour, baking soda, cinnamon, oats,
nuts and raisins in a bowl. Gradually spoon into the creamed butter and sugar
mixture while mixing at low speed. Stir in vanilla. Portion the dough using
a small ice cream scoop. Drop the ball onto a greased cookie sheet. Flatten
the cookie with a wet spatula into a 4-inch round. Repeat with the remaining
dough. Bake for 15 to 17 minutes, or until cookies are golden brown.
