RUSSIAN TEA CAKES
1 cup soft unsalted
butter 1/2 cup confectioner's sugar 2 1/4 cups flour 1/4 teaspoon
salt 3/4 cup finely chopped pecans confectioner's sugar to coat
Preheat oven to 350 degrees. In an electric mixer, cream butter
and sugar. Beat in flour and salt. Mix in chopped pecans. Chill dough. Roll
into 1 inch balls, or roll into rectangular shapes. Place on ungreased baking
sheets. Bake until set, but not brown. While still warm, roll into
confectioner's sugar. Cool and store in airtight container.
