BLUEBERRY MUFFINS
Makes 12 muffins
2 cups flour 2 teaspoons baking powder 1/2 teaspoon salt
1/2 cups butter 1 cup sugar 2 eggs 1/2 cups milk 1 teaspoon
vanilla 1 cup blueberries 2 tablespoons lemon juice lemon zest
Preheat oven to 400 degrees. Mix the flour, baking powder, and
salt and make a well in the center. In another bowl, cream the butter and
sugar. Beat in the eggs 1 at a time. Add the milk and vanilla. Pour into
the dry ingredients and stir just enough to moisten. Fold in the blueberries.
Fill greased muffin cups 3/4 full and bake for 20 to 25 minutes or until a
toothpick inserted in the center comes out clean. Remove muffins from cups
