BLUEBERRY ORANGE MUFFINS
Makes 12 muffins
1 3/4 cups flour 2/3 cup brown sugar 1 tablespoon baking powder
1 tablespoon orange zest 1 cup milk 2 eggs 3 tablespoons melted
butter 1 teaspoon vanilla 1 cup blueberries
Preheat oven to 375
degrees. In bowl, mix together flour, sugar, baking powder, and orange
rind. Whisk together eggs, milk, butter and vanilla. Stir into flour
mixture just until blended. Fold in blueberries. Spoon into muffin tins 3/4
full. Bake for 20 to 25 minutes or until a toothpick inserted in the center
comes out clean. Transfer muffins on a rack to cool.
