BRAN FLAKE MUFFINS

Makes 12 muffins

1 1/2 cups ready to eat oat bran cereal
1 cup whole wheat pastry flour
1/2 cup rolled oats
1/2 cup oat bran
2 1/2 teaspoons baking powder
1/2 teaspoon nutmeg
1/2 cup finely chopped dried apricots
1 tablespoon orange zest
2/3 cup buttermilk at room temp
1/3 cup apricot nectar
3 egg whites
1/4 cup honey
1 tablespoon oil


Preheat oven to 375 degrees.
In a large bowl mix the oat bran cereal, flour, rolled, oat bran, baking powder and nutmeg.
Stir in the apricots and orange rind. In a medium bowl, blend the buttermilk, apricot nectar, egg whites, honey and oil.
Pour the liquid ingredients over the flour mixture.
Combine well but don't over mix.
Grease 12 muffin cups and fill almost to top.
Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean. Transfer muffins on a rack to cool.
