BRAN MUFFINS
Makes: 12 muffins
1 1/4 cups all purpose flour 1 tablespoon baking powder 1/2
teaspoon salt 1/2 cup sugar 1 1/2 cups wheat bran 1 1/2 cups milk
1 egg 1/3 cup shortening
Preheat oven to 400 degrees.
Sift the flour, baking powder, salt and sugar. Soak the wheat bran in milk
for a few minutes. Add egg and shortening to bran mix. Mix well. Add flour
mix and beat well for 3 to 4 minutes. Spoon mixture in 2 1/2 inch greased
muffin pan cups. Bake for 18 to 20 minutes or until a toothpick inserted in
the center comes out clean. Transfer muffins on a rack to cool.
