CRANBERRY BANANA MUFFINS
Makes 12
1 egg
1 cup mashed banana 3/4 cup milk 1/2 cup brown sugar 1/3 cup
vegetable oil 1 1/2 cup bran cereal 2 cups flour 1/2 cup chopped
walnuts 1 tablespoon baking powder 1/2 teaspoon salt 1/2 teaspoon
cinnamon 3/4 cup whole berry cranberry sauce
Preheat oven to 400
degrees. Grease 12 large muffin cups, or line with paper baking cups.
Combine egg, mashed banana, milk, brown sugar, and oil; stir in cereal; let
stand to soften. In a large bowl, mix remaining ingredients, except the
whole berry cranberry sauce, stirring just until moistened. Spoon half of
the batter into muffin cups; top each with 1 tablespoon cranberry sauce.
Spoon remaining batter on top to cover cranberry sauce. Bake 20 to 25
minutes, or until golden brown. Remove muffins from cups while hot. Cool on
rack. Store in airtight containers.
