CRANBERRY COCONUT MUFFINS
Makes :18 muffins
2 cups flour 3/4 cup sugar 3/4 cup shredded coconut 1
tablespoon baking powder 1 teaspoon baking soda 1/4 teaspoon cinnamon
1/4 teaspoon salt 1 1/4 cup buttermilk 2 eggs 1/4 cup vegetable
oil 1 teaspoon vanilla 1 cup cranberries, chopped
Preheat
oven to 400 degrees.
In a bowl, combine flour, sugar, coconut,
baking powder, baking soda, cinnamon and salt.
Whisk buttermilk, eggs, oil,
and vanilla. Stir into flour mix just until moistened. Add cranberries.
Spoon into muffin tins 3/4 full. Bake at for 20 minutes or until a
toothpick inserted in the center comes out clean. Remove muffins from cups
while hot. Transfer to a rack and allow to cool.
