HONEY NUT APPLE OATMEAL
MUFFINS
Makes 12
2 cups
flour 1 1/2 cups rolled oats 1 tablespoon baking powder 1 teaspoon
salt 2 eggs 1 cup milk 3/4 cup honey 1/3 cup melted butter
1 19-oz can apple pie filling, coarsely chopped 1 cup finely chopped
pecans 1/2 cup liquid honey
Preheat oven to 400 degrees.
Combine flour, oats, baking powder and salt in a large bowl. In another
bowl, beat eggs slightly. Stir in milk, honey, and melted butter. Add milk
mix, apple pie filling and 1/4 cup of the nuts to the dry ingredients. Stir
just until moistened. Sprinkle 3/4 cup of the nuts over the muffin batter.
Bake for 25 minutes or until a toothpick inserted in the center comes out
clean. While muffins are hot, drizzle the remaining honey over them. When
the honey is absorbed. Remove muffins from cups while hot. Transfer muffins on
a rack to cool.
