MAPLE SPELT MUFFINS

Makes 12 muffins

1 cup dried fruit (raisins, cranberries, cherries, dates)
2 1/2 cups spelt flour
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 eggs, beaten
1 tablespoon vegetable oil
1/4 cup maple syrup
1 1/2 cups milk

Preheat oven to 375 degrees.
Combine all dry ingredients. Add eggs, oil, syrup and milk. Mix. Fill muffin cups, greased or papered.
Bake for about 25 minutes, or until browned.
Transfer to rack and allow to cool.
