STRAWBERRY CHEESECAKE
MUFFINS
makes: 12 muffins
4 ounces cream cheese 1/4 cup icing sugar 2 1/2 cups flour
1 tablespoon baking powder 1/2 teaspoon salt 1 egg 1 1/4 cups
milk 1/2 cup brown sugar 1/3 cup melted butter 1 teaspoon lemon zest
1/4 teaspoon almond extract 1/4 cup strawberry jam
Preheat
oven to 375 degrees. Blend cream cheese and sugar until smooth. Combine the
flour, baking powder and salt. Mix egg, milk, brown sugar, butter, lemon
zest, and almond extract and stir into the dry ingredients. Spoon half of
batter into muffin cups. Top with 1 tablespoon cream cheese mix and 1 teaspoon
jam. Spoon remaining muffin batter on top. Bake for 20 minutes or until
golden brown. Cool muffins in pan. Remove muffins from cups while hot and
cool on rack. Note: other jam may be used: raspberry, apricot, peach or
grape.
