YOGURT BRAN MUFFINS

Makes 12 muffins

1 1/4 cups flour
1 1/4 cups natural bran
3/4 cup brown sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 cup chopped dried apricots
1 cup low-fat yogurt
1/4 cup vegetable oil
1 egg
1 1/2 teaspoons vanilla


Preheat oven to 375 degrees.
In bowl, combine flour, bran, sugar, baking powder, baking soda, cinnamon and salt.
Reserve 2 teaspoonns apricots; stir remaining apricots into bowl. Whisk together yogurt, oil, egg and vanilla.
Stir into flour mix just until combined.
Spoon into greased muffin tins 3/4 full. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Remove muffins from cups while hot.
Transfer muffins on a rack to cool.
