eggs, beaten 1/2 cup milk 1/2 cup Parmesan, grated 1/2 teaspoon
oregano 6 ounces cooked noodles 4 ounces diced pepperoni 1 cup
sliced zucchini 1/2 cup slivered red pepper 1/2 cup sliced onion
1/2 cup shredded mozzarella
In a mixing bowl, Stir together eggs,
milk, Parmesan and oregano. Add noodles. In broiler proof pan, cook
pepperoni for 2 minutes. Add zucchini, red pepper and onion. Cook, stirring, 3
to 4 minutes. Stir into egg mixture until blended. Reduce heat to low. Cook
10 to 12 minutes or until edges are set and bottom is golden. Sprinkle with
mozzarella. Broil 4 to 5 inches from heat for 3 to 4 minutes or until
cheese is melted and top is set.
