LEEK QUICHE
WITH THREE CHEESES
Serves 6

recipe flaky pie crust 4 tablespoons butter 1 tablespoon virgin olive
oil 4 large leeks 2 tablespoons all purpose flour 1/2 teaspoon salt
1/2 teaspoon ground black pepper 1/4 teaspoon cayenne pepper 1/2
cup milk 3/4 cup light cream 4 ounces sliced Prosciutto ham, diced
4 ounces goat cheese 1/2 cup white cheddar cheese or Cantal cheese
1/2 cup Swiss cheese
Prepare the pie crust. Roll dough to 1/4 inch
thick and drape a 9-inch quiche pan with dough. Clean leeks, and cut across
into small pieces the white part and 2 inches of the green. Preheat oven to
375 degrees. In a large frying pan over medium heat, melt butter with the olive
oil. Add leeks and sauté until translucent, about 5 minutes. Stir in
flour, salt, black pepper and cayenne pepper. Remove from the heat and transfer
to a mixing bowl. Whisk in milk and cream. Add ham, white cheddar or Cantal
cheese, and Swiss cheese. Pour mixture in pie crust. Cut goat cheese into small
pieces, and scatter evenly over quiche. Bake until a crisp golden crust
forms on top and bottom crust, 20 - 30 minutes. Cut into wedges and serve hot.
