PASTA ROLL
WITH THREE CHEESE
Serves 6

teaspoons butter 4 medium minced scallions 1/2 cup minced smoked ham
6 ounces soft cream cheese 1/2 cup firm ricotta cheese 1/2 cup
grated parmesan 1 egg 1/4 teaspoon ground black pepper 1-12 by 14
-inch pasta roll 1 beaten egg 6 thin slices ham 1 1/2 cups
marinara sauce
Melt butter in
a skillet. Add scallions, and cook over low heat until soft. Combine minced
ham, three cheeses, eggs, and scallion. Season with pepper. I also use
Aromat seasoning. Lay the sheets of pasta roll on a sheet pan. Brush with 1
beaten egg. Spread on half of cheese mixture over surface of pasta roll. Cover
cheese with the ham slices. Spread remaining cheese over ham. Tightly roll
up pasta, jelly roll style. Roll pasta in cheese cloth. Tie each end with
string. Poach in simmering water for 25 minutes. Drain and cool. Remove
cheese cloth. Slice into 1 inch thick slices. Arrange on hot plates. Serve
with hot marinara sauce.
