APPLE AND
CINNAMON OATMEAL PANCAKES
Makes 12 4-in
pancakes.
1 cup +1/4 cup buttermilk 2/3 cup quick cooking rolled
oats 1 egg, lightly beaten 2 tablespoons light brown sugar 2/3 cup
grated granny smith apple, juice squeezed out 6 tablespoons flour 6
tablespoons whole wheat flour 1 teaspoon baking soda 1/2 teaspoon salt
1 teaspoon cinnamon 2 tablespoons oil
In a mixing bowl, whisk
together 1 cup of buttermilk and the oats. Let stand 15 minutes. In a large
bowl, whisk together the egg, and brown sugar. Squeeze juice out of apple and
combine with egg mixture. Stir in the flours, baking soda, salt, cinnamon,
oil, the oats mix, and the remaining 1/4 cup buttermilk. Combine well. Cook
pancakes on a hot greased griddle, or a non-stick frying pan. Cook the
pancakes 1 to 2 minutes on each side or until they are golden.
