ANCHOVY
STUFFED EGGS
Serves 6
6
hard boiled eggs 2 ounces soft butter 2 ounces cream cheese 1/4
teaspoon salt 1 tablespoon mayonnaise 1 dash hot pepper sauce 2
teaspoons anchovy paste 6 anchovy fillets
Peel the hard boiled
eggs. Cut in halves lengthwise. Remove yolks. Mix yolks, butter, cream cheese,
salt, mayonnaise, hot pepper sauce, and anchovy paste in a food processor.
Pipe mixture into egg whites and top with strips of anchovy fillets.
