CLAM FRITTERS

Serves: 12

2 cups fresh chopped clams
1 cup clam juice
2 eggs
8 ounces flour
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon white pepper
1 cup cocktail sauce

Combine the chopped clams with the juice. Beat in the eggs, flour, baking powder, salt, and pepper.
Drop teaspoonfuls of batter on a hot griddle or into a deep fryer. If using griddle, cook 2 minutes on each side; if deep frying, cook 3 to 4 minutes at 360 degrees F. (185 C).
Serve with cocktail sauce.
