OVEN-DRIED TOMATOES

Makes: 24

12 medium Italian tomatoes
1/2 cup olive oil
2 tablespoons chopped shallots
1 tablespoon minced garlic
1/2 cup chopped fresh basil
1 tablespoon chopped thyme

Preheat oven to 250 degrees.
Wash and cut Italian tomatoes in halves lengthwise. Sprinkle with olive oil, shallots, garlic, basil, and thyme.
Place on baking sheet. Dry in oven for 3 to 4 hours.
Serve with smoked salmon mousse piped on tomatoes, or spread with tapenade.
