SPICY HAM
AND PHYLLO TRIANGLES
makes 16

tablespoons butter 2/3 cup minced scallions 1 teaspoon minced garlic
1 teaspoon grated fresh ginger 1/2 cup minced red pepper 1/2 cup
minced fennel or celery 1/2 cup minced ham 1/2 pound phyllo 1/2 cup
melted butter
Preheat oven to 375 degrees. In a small skillet, melt
butter. Add scallions, garlic, ginger and cook over low heat until tender, not
brown, about 5 minutes. Add pepper and fennel or celery. Cook for 4 minutes.
Add ham. Mix well. Lay one sheet of phyllo on a work surface and brush with
butter. Place a second sheet over, and brush with butter. Repeat with third.
Brush with butter. Place another. Do not butter. With a sharp knife cut
through the stack lengthwise and widthwise to divide it into 4 portions.
Cut each portion into four strips, making 16 strips total. Place 1 1/2
teaspoons of filling at the lower left corner of each strip. Fold as you
would a flag, making a triangular package. Repeat with remaining strips.
Bake until golden brown, about 12 to 15 minutes. Serve warm.
