1 cup pearl barley 1
quart chicken broth 2 cups water 1/2 cup chopped scallions 1/2 cup
each diced red, green and yellow peppers 1/2 cup diced celery 1 cup
diced tomatoes 1/2 cup chopped parsley 1 cup herb vinaigrette
Simmer barley in
chicken broth and water until done, about 40 minutes. Drain well. Cool. Add
scallions, peppers, celery, tomatoes, and parsley. Mix in the vinaigrette.
Chill until ready to serve.
