FRENCH POTATO SALAD

Serves: 4

2 pounds small new potatoes
4 medium shallots, chopped

For dressing:
1/4 cup white vinegar
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1 tablespoon chopped parsley

Scrub potatoes, cook in boiling water until tender. Drain. Allow to cool. Peel and slice.
Combine remaining ingredients in a mixing bowl. Gently blend in the sliced potatoes. Marinate at least an hour.
Note: Mayonnaise sauce can also be mixed with dressing.
